Simnel cake is a fruit cake often associated with Lent, Easter and Mothering Sunday.
Our Simnel Cake is a delicious light fruit cake, spiced with cinnamon, nutmeg & mixed spice. It is made with vine fruits, glace cherries and citrus fruits, that have been allowed to soak in rum for a few days prior to baking. It is baked with ground almonds and a layer of marzipan in the middle. Hand decorated with marzipan, and chocolate mini eggs.
In addition to the whole Simnel Cakes, I am also baking Simnel Traybake slices, which will be available in slices decorated with marzipan and chocolate mini eggs.
