Simnel Cake
Simnel cake is a fruit cake often associated with Lent, Easter and Mothering Sunday.
Our Simnel Cake is a delicious light fruit cake, spiced with cinnamon, nutmeg & mixed spice. It is made with vine fruits, glace cherries and citrus fruits, that have been allowed to soak in rum for a few days prior to baking. It is baked with ground almonds and a layer of marzipan in the middle. Hand decorated with a layer of marzipan, topped with 11 marzipan balls, a marzipan ribbon around the base and a few chocolate Mini Eggs.
